Sanitation and Hygiene Considerations for Chilling Applications in Meat Mixing and Food Freezing Equipment

Food chilling in meat mixing applications not only provides temperature control of the product during the mixing application but also provides advantages for downstream processing methods. During our TECHTalk, we’ll be discussing available methods of temperature maintenance and control during the mixing process including the use of cryogenics — namely CO2 and liquid nitrogen — that require specific apparatus design to facilitate the temperatures and pressures unique to their use and to allow for the sanitation and inspection at the end of each production shift. We will also briefly discuss designing of cryogenic equipment used by the industry and how the basis of these designs should be grounded in ease of sanitation and ability to provide thorough visual inspection during the pre-operation process.
